Kolkata and Odisha have spent over a century arguing about who invented this — Nobin Chandra Das's 1868 sweet shop in Kolkata, or a temple ritual in Puri said to date back centuries earlier. Nobody has settled it, and probably nobody ever will.
What makes it taste like that
The sponginess comes from working fresh chhena (curdled milk) until it's completely smooth before shaping — any graininess left in the curd shows up in the final bite. The syrup should taste faintly of cardamom or rosewater, never cloying, so the sweetness plays second to the texture.
