Risotto's roots trace to Northern Italy, where rice cultivation took hold in the Po Valley centuries ago. Milan's saffron-yellow version has its own local legend — a stained-glass worker supposedly used saffron pigment to spike a wedding risotto as a joke, and it became a hit. Charming story, thin evidence — but the saffron risotto is real and iconic regardless.

What makes it taste like that

The creaminess comes entirely from starch released by constant stirring, not cream — Arborio or Carnaroli rice releases just enough to build a sauce around itself. Wild mushrooms add an earthy depth, and a final knob of butter and parmesan stirred in off the heat ('mantecatura') gives it that glossy finish.
