The story most often told is that in 1889, Naples pizzaiolo Raffaele Esposito created this pizza for Queen Margherita of Savoy, using tomato, mozzarella, and basil to mirror the colors of the Italian flag. Whether the queen actually tasted it, or whether the tale was embellished later for good marketing, is genuinely debated by food historians — but the pizza, and the name, stuck regardless.
What makes it taste like that
The char on the crust comes from a wood-fired oven running near 900°F for barely 90 seconds — that speed is what keeps the base soft instead of drying out. San Marzano tomatoes bring a natural sweetness that needs almost no seasoning, and fresh mozzarella, not the low-moisture kind, is what creates those milky pools instead of an even melted layer.
