A pasta-and-cheese bake existed in Europe before America ever got its hands on it, but the American version is often traced to James Hemings, the enslaved chef of Thomas Jefferson's household, who trained in France and is credited with bringing a refined version of the dish back to Monticello in the 1780s. It's been a uniquely American comfort food ever since, from Jefferson's dinner table to a bright orange box in nearly every pantry.
