What makes it taste like that
The shell is meant to be nearly hollow, crisp enough to shatter on contact. The water is the whole game: tamarind for tang, mint and coriander for a green sharpness, black salt for that faintly sulphurous edge that makes you reach for the next one immediately.

The water should hit you before the shell even finishes cracking. If it doesn't, it's not cold enough.
