A daily ritual in South Indian homes more than a single invented dish — kaapi isn't just made, it's performed. The steel filter-and-tumbler tradition is old enough that nobody bothers dating its invention; it simply always seems to have been there.
What makes it taste like that
The bitterness is controlled by a slow drip through a two-chamber steel filter, not a fast brew — that patience is what gives the decoction its thickness. Chicory adds a faint earthy note, and the froth only forms if the milk is poured from a real height, tumbler to davarah, again and again.
