The most commonly told version credits Teressa Bellissimo at the Anchor Bar in Buffalo, who fried up spare chicken wings and tossed them in hot sauce and butter as a quick late-night bite for her son and his friends in 1964. Whether or not every detail of that story holds up, the wing went on to become its own entire category of American bar food, and now travels the world on delivery apps far from Buffalo.
What makes it taste like that
A double fry gets the skin properly crisp, and the sauce is tossed on rather than drowned in, so the crunch survives contact with the vinegar-cayenne butter. Cool, sharp blue cheese on the side cuts the heat rather than smothering it.
